I have started to get a lot of fruit - raspberries/red currents/black currents.

I cannot get another freezer as the only spare space is in an outdoor shed, and I tried that last year and suffice to say it didn;t last the cold winter and I lost all my fruit ???

So, I am thinking about bottling fruit...  I do not want to use sugar syrup.  Can I use plain water or apple juice as commercial canners sometimes use?

I have looked up instructions, but cannot seem to find easy to use instructions for small quantities at a time?

Can you help?
thanks

Brilliant, thanks Tim  ;D  You are always a mine of information

Looks like I need (easier) to get a pressure cooker (Prestige seem to go down to 5lbs looking on their website)

okay... I now have some books... but instructions seem to conflict in one manner...

with clip style bottles and using the oven method at 150degrees... do the clips/lids need to be sealed when in the oven or left "ajar"... it specifically states the screw typed should be loose, but what about the clip type?

I will have too many at times to use a pressure cooker...

thanks
