courgettes on mass

hi does anyone have any recipes for courgettes we planted about twelve plants and they are now going mad. can we freeze them or pickle them? any ideas would be great. HELP joie

Put them in a box outside your house with a note for people to help themselves.  I have made many new friends this way.  Take runner beans up to my tennis club for members to fight over.  I used to like courgettes but after eating them every night am fed up with the sight of them.

thanks everyone. i`ll try them all. luckily my good friends own a pub so i think they will be having courgettes on the menu for a few weeks. thanks everyone joie

How about quiche? they freeze well too

Courgette Pesto Quiche


Pastry
3 small   Courgette (halved and cut In 1/4" slices
2   tbl   Pesto (Great if you have a basil glut too!)
10 oz cheese   Swiss che
2 Cloves garlic, minced
1/2   tsp   White pepper
1/4   tsp   Cayenne pepper
1 Red bell pepper, chopped
3 Eggs
Cream



*   Precook courgette (saute in butter or microwave 5 minutes). Cool and drain off excess moisture. In mixing bowl, combine courgette, pesto, cheeses, seasonings, and pepper. Mound filling in pastry shell. Whisk eggs and half-and-half until smooth. Pour over filling. Bake in preheated 375 oven for 30 minutes or until done. If top begins to brown too fast, cover with foil. Quiche is done when knife inserted in center comes out clean. Allow to stand on wire rack 5-10 minutes before cutting. Serve hot.

So many ways to eat them! pureed, sauteed with garlic and coriander, soup, young ones grated in salads, frozen in chunks for winter soup.
ratatouille freezes well but I put it in jars!
Basic recipe - cook up onions, garlic, bay leaf, mediterranean herbs, seasoning, aubergines, tomatoes, courgettes in olive oil. add tomato paste if a bit thick.
When cooked, I do this:
sterilize my jars (Normal food jars, wash in dishwasher for good cleaning), make a big pan of boiling water,
bring the ratatouille to boiling point, spoon into jars, wipe clean mouth of jars, lid on tight
into that boiling water and watch that it is well boiling inside the jar, i let them boil for at least 10 minutes.
There is no meat so I doubt you could poison yourself  ;)
You will see afterwards that the jars are sealed down - if any are not, in the fridge and use them soon. If they are well sealed, I eat it that way all winter. I put my salsa in jars too. same method.

Courgette chutney? Mix with apple - good apple year, this one - as a variation.

I usually make a batch of ratatouille chutney later in the summer. (My recipe tends to vary according to how much of everything I've got, so I don't think it would be of much use, but it's basically onions, courgettes, aubergines, peppers & tomatoes with sugar & vinegar.)

And courgette soup, courgette puree (useful for sauces - it looks stunning with salmon) & courgette bread (and cake) all freeze well.

(You have got more than one freezer, haven't you?)

thank to everyone all have been really helpful. i see what you mean trevor d thinking about converting the cellar in to a jar and freezer room. The old coal shed makes your eyes water as soon as you open the door due to the amount of onions now hanging. but it all feels so good when you don`t have to stop at the veg aisle at the super market thanks again joie x

we lightly cook them - chopped with skin but de-seeded - in a pan with very little water with the lid on, then puree in a blender to make a concentrated soup base. this is frozen in plastic drinks cups, taking up little space in the freezer and we add other ingredients when making soup from it.

you could try turning the lot into biodiesel. Apparently it works really well, but your engine is prone to mildew
