Roasting Pine Nut kernels, tip

Found this today whilst doing a recipe,

to roast pine nuts, instead of putting under the grill (when I always manage to burn em!) Put on some kitchen roll on a plate and pop in the microwave on full heat for 2-3 mins..........................worked well for me! (stir them around halfway through and keep an eye on them whilst cooking!)

I love pine nuts but always burn them when I toast them. Will try this, thanks!

I can buy these quite cheaply in a patisserie wholesale store that sells retail too.  Just as well as otherwise I would need a mortgage to make a Christmas cake - dried fruits and nuts are fiendishly expensive in Belgian supermarkets and come in small quantities.

Anyway - pine kernels - we like them scattered over baked fennel with goats cheese and sundried tomatoes and also with bacon bits and broccoli to go with pasta and I also use them in an Italian cream and green olive sauce to go with chicken.  It's supposed to have walnuts but Possum prefers pine nuts.
