Sauteed Jerusalem Artichokes

Here you go Em!

Serves 6
1 1/2 lbs Jerusalem Artichokes
2-4 tablespoons olive oil (use as much as you think!)
1 teaspoon finely chopped garlic
salt
freshly ground pepper
1 tablespoon finely chopped parsley (opyional)

Peel artichokes with potatoe peeler, OR if you are OK with peel, just scrub them.
Drop into boiling salted water, largest first, smallest last.
As water comes to a boil drain them.They should still be fairly hard. Cut into slices about 1/4 inch thick.
In skillet saute the garlic in olive oil until lightly coloured, add artichokes and stir. Add S&P to taste. Turn a few times during cooking. They are cooked when tender at the pricking of a fork or knife.
Serve and enjoy!!

I tried my Jerusalem artichokes last night. Roasted them with pork.

NEVER, EVER, EVER, EVER AGAIN!

I've been blown up like a barrage balloon all day, and when I finally decided (not consciously)  to let it all out I was barred from the City Centre.

I know what you mean Trixie. They actually hurt. It's no longer funny at that stage. They taste great, and I'm going to try the Aesophotida this year. But if that doesn't work, I'm going to keep them as a pretty bush.

Last year we found that asafoetida does inhibit the contribution to greenhouse gases, though you should avoid large portions of JA in any case and they definitely affect some people more than others.

I've grown some Jerusalem artichokes that supersprout sent me last year, they are MASSIVE!!! Probably 10 feet maybe even more.
I bought some from our local greengrocer last year to eat and I HATED the taste, we roasted them and they just tasted yuk, maybe I should try them the way described on here.

What else can I do with them? (and I mean how to cook them before Trixiebelle adds a naughty comment!!  ;) )

Thought I heard a strange noise and it made the news as well  ;D

everyone's different in this aspect but in my experience it does depend a bit on how you cook them - adding some kind of fat such as bacon helps and  for vegetarians add cheese if that's allowed - other than that I would suggest one of the red varieties as they are not as bad - if you love them enough you just have to experiment I guess or avoid city centres  ;D

Supersprout recommended steaming them for about 20 minutes, after which you can squeeze the insides out of the skin. Her recipe for Palestine soup is here:

PS There has been a suggestion that if you boil JA's for a few minutes then throw away the water and carry on cooking in fresh water the unwanted side effects are dramatically reduced.

I CONCUR OLLIEC!

I even embarassed MYSELF, alone in the room at the time (for about 12 hours I might add!)

It was beyond a joke and make no mistake.

Someone told me today that if you've eaten them ONCE then your digestive tract will be used to them and it won't happen again. Oh yeah .... and lightening never strikes twice - GOOGLE IT!!!! IT HAPPENS!!!

Another person told me that it does you good to have a 'clear-out' every now and again.

A clear-out of WHAT exactly??? AIR??? I'm sure that if I was THAT full of air before I ate the blasted things I'd be up in the stratosphere waving at Richard Branson in one of his balloons.

blame the inulin - actually very good for health but the problem is usually too much at a time, so if you eat small portions more frequently then we will not have to hold you responsible for adding to the so called greenhouse gases

failing that, use them to spark your car (no kidding)  ;D
