Courgette Jam!!

Okay, so courgettes are really only like immature marrows, and as I adore marrow and ginger jam, I thought I would use a couple of the biggest courgettes up and make some jam.  HOWEVER.....where is my crystalised ginger...oh yes, I ate it when I was feeling sicky a while back!  Pah!  But, by now the courgette is in the pan bubbling away, so I thought.....and pondered.....and sent daughter number one up the garden with a bowl to fill it with Jostaberries.  So I now have a 6 jars of marrow (courgette), jostaberry and lemon jam! 

In case anyone should want it, the recipe was.....

1Kg courgette, chopped and boiled in a little water until very tender.
A small desert bowl of berries
Juice and finely shredded rind of 2 lemons
1Kg granulated sugar

Cook the vegetable until very tender, then mash.  Add the berries and lemon, bring back to the boil and add the sugar.  When the sugar is dissolved, bring back to a rolling boil and cook until setting point is reached.  Mine took ages and ages for all of the liquid to pretty much go, but it has made a dark purple, thick, chunky jam, with a delightful aroma!  Well, a girl really needs to think of things to do with all these lovely courgettes!

Just found this. What a good idea. I think I'll give it a go  , with all the small amounts of berries I have left over from other jams.

It is a winner.  I have 2 marrows on standby in my kitchen, one for marrow and ginger, and one for marrow and mixed fruits.  ;D

How much ginger will I need for the ginger version, and will fresh ginger be ok?
