How big should they be before I pick them? (The aim is to pickle them for my addicted son.)

Do you know which variety of jalapeno they are?  Have they started to go red yet?

grawrc

Haven't a clue. And the ones we normally buy pickled are green.

They will grow up to three inches, I pick mine at about 2 inches, you can pick them green and they will ripen to red.

The best rule of thumb for chili's of any variety to know how long they will grow, is to wait until one rippens, that will show you the maximum length, you can then pcik gree when they get that long.

Are your's in a green house/poly tunnel or outside?

Mine tend to be smallish.

They're on south facing windowsills, but from what you are all saying i think they have a bit to go. Now signs of turning red either, although my cayenne ones are beginning to turn red now. Thanks for all the advice.

And, in passing, I thought that I had failed when mine were all 'crazed'.

Later read that that's how they're meant to be!
