Does anyone know if I can "top" this plant to encourage more side shoots or will it develop sideshoots as it gets bigger?

Reliable authority says no!

Thanks for the prompt reply Palustris, very much appreciated.

I believe sideshoots will grow but you will lose the nice shape and height of the flower display. It's funny because while most folks are fretting about bindweed and thistles, I have V. bonariensis and Mirabilis as my primary weeds.  8)

It hasn't quite reached weed status here but it is certainly trying hard!

It surely does seed itself around.

i cut the long stem off when it's stopped flowering and get lots of side stems..cut it down in winter, it comes right back up in spring..lovely plant , but it does like to spread itself around a bit  :)
