Now that your Chives are rushing into flower ....

.... poorly Wife ... so bland food? So baked fish with parsley butter - mash with horseradish - &, the point of this post -  Pru's Lemon & Chive Sauce.  Just try it!!

Handful of Chives - dollops of Soured Cream or Creme Fraiche - twice that in Mayo -
s & (green - my idea) p  - & lemon juice to taste.

She's feeling better now!

And make good use of the chive flowers too - just fill a jam jar with them and top up with a white vinegar (white wine and cider are both good). Leave for a week or two, giving the occasional shake. Then strain in to a vinegar bottle. What you are left with is a lovely pink/light purple coloured vinegar, full of chive flavour. Great used in salad dressing, on chips (maybe not for the purists!) or a fave of mine, on freshly cooked young beetroot..

Brilliant idea.  I wonder if you could use them to flavour oil.  Anyone tried?

Reporting in on chive flowers in oil. Used a little bottle and not the very best oil (as I didn't have any really good stuff) BUT even so, I made salad dressing last night with said flavoured oil, white balsamic vinegar,little amount of garlic thinings and a very little sugar. It was divine.Will make more and more and more..... :P

What a clever idea - wonder if I could do that with the flowers of my african basil.  I am going to cut the flowers off tonight and give it a bit of a haircut....

Anyone tried it.
