Banana Bread

Another Fav curtisity of mr granger

Ingrediants

250g Plain flour
250g caster suger
175g good quality chop chips or chunks, milk/plain or dark to taste
125g unsalted butter softened
2 tp baking powder
4 ripe bananas
2 eggs lightly beaten
1 tp vanilla extract

Preheat oven 180degrees c

Mix the butter, sugar, banana, eggs, vanilla, and choc chips in a bowl, now all the remaining dry ingrediants stir to combine but dont overmix.

Pour the mix into a non stick lightly greased and floured loaf tin ( you can try ground almonds as an alternative to flour ). Bake for 1 & 1/3 hour. Leave to cool in tin for 5 min before turning onto wire rack. Serve in thick slices with butter.

You can also add nuts to the top of the batter before it goes in the oven, i have tryed walnuts and crushed there yummy.

Will freeze ;-)

I also just happen to have some overripe bananas that need using up, so I'll be giving this a go later on......kids will love it! ;D
If it's not pouring with rain, I'm either in the garden or at the lottie! Probably still there in the rain as well TBH....🥴

we do one in the bread machine but never thought of adding chocolate  .... will give it a go

I've got the bannanas but no chocolate - saw the title & thought I'd go & make it - now will have to wait till I've been shopping.

pick up a dairy milk bar and break it up.

Or try another sweet fruit.

It might work without the choc  ;)

Just read this thread. Sounds yummy. Went into kitchen but only have 2 bananas left. So will have to wait till tomorrow...... I was gonna let the kids make it, they love cooking..... not for me honest ::)

I have a drop dead easy banana muffin mix that is good if anyone wants it,I chuck it all in the mixer, scoop it into cases and it bakes while I am in the bath. Will double as a bread too.XX Jeannine

HI Guys,

Finished what was in the freezer and have just made another batch, the choc bread is the one on the left. I have added walnuts to the bread before cooking.

Jamie Oliver Banana & Honey Bread

2lb strong bread flour
6 bananas
8 tablespoons of good runny honey
optional:handful of cracked or chopped almonds
30g/1oz fresh yeast or 3x7g sachets dried yeast
2 tablespoons sugar
2 level tablespoons sea salt

Peel & puree bananas until wet mixture.
Pour into measuring jug and top with water until just over 1pt.


Pile flour on clean surface & make well in centre
Pour in 1/2 banana mixture, 1/2 honey & nuts then add yeast,sugar & salt. stir with fork
Bring in flour from sides until stodgy, porridgey consistency.
Add remaining banana mixture.
Flour hands & pat & push dough together
Knead until dough is SILKY & ELASTIC  (v. important)
Flour top of dough. Put in a bowl & cover with clingfilm.
Allow to prove in warm,moist, draught-free place for 1/2 hr
until doubled in size.
Once doubled in size, knock out air for 30 seconds
divide the dough into 10 balls.
pack these next to each other in a flour-dusted baking tin
where they will prove together.
Before putting into the oven drizzle generously with the rest
of the honey so that the top of the bread will caramelize, going
nice and golden.
Bake in preheated oven at 190c/gas 5 for 20 mins
ENJOY!!! :P

My OH used to make fantastic banana bread, the riper the better.  He got the recipe from the Radio Times about 20 years ago, but when he passed away I think he took the recipe with him.  :( :( :( :(

I'll try yours (his didn't have chocolate in it) and see if it's similar.  :) :) :)

I'd like that recipe please Jeannine.
Gardening Rule: When weeding, the best way to make sure you are removing a weed and not a valuable plant is to pull on it. If it comes out of the ground easily, it is a valuable plant.

Banana Muffins. makes 12 huge muffien in the big American muffin cases

Turn oven to  gas 4
1/2 cup butter
1 cup sugar
2 eggs
3 very very ripe bananas


1 3/4 cups plain flour
1/2 teaspoon baking powder
1 teaspoon bicarbinate of soda
1/2 teaspoon salt
1 cup fin chopped walnuts

I use my Kenwood mixer and do as follows. Don't fuss with it.

Turn machine on,
Chuck in the butter,sugar,and raising agents and salt,after about a minute add the bananas,then sugar, then eggs.

Add the nuts, then add the flour just to barely mix. IT NEEDS to be lumpy

Share between the muffin cases and bake for 25-30 minutes.

You can add choc chips as well of you wish.

Don't overblend, the mixture will be lumpy and loose. Don't overbake.

Really easy and freezes well.
