Sweet Potatoes

This was a raving success with pork chops tonight:

Sweet Potato Baked with Apple.

1lb boiled sweet potatoes
12oz cored sliced apples
4 oz brown sugar
4oz butter
Peel potatoes and put half into a buttered casserole. Put half the apples on top(either sweet or cooking) and sprinkle half the sugar or less if apples are eaters. Dab half the butter over the topand repeat with remaining ingredients.
Cover dish, and cook for 30-45 mins at 180c. Remove foil and leave 'till
top is glazed  and apples thoroughly cooked.

I only used a sprinkle of sugar as we have a diabetic in the family,it was plenty.
