Expert advice please - chutney gaffe?

Hoping someone can provide reassurance or tough love ...
Yesterday I made a damson chutney, using spirit vinegar.
Tasted this morning, and it's sooooo sharp! >:(
Have I made a basic gaffe? Did I do a wrong thing? :-[ Will the chutters calm down in a few months, or should I recycle and put it down to experience?

I would try a small sample with added sugar & see how that works out before committing another disaster!!

thank you tim, I had a mad moment - it was the only vinegar I had in the house - usually use it for general cleaning and getting limescale out of the loo ::) serves me right for being a lazy madam eh :-\

and I got no sugar left in the house now either
trouble is, I think anything I mulch it with might keel over and die >:( :o
