How do you clean a self-cleaning oven?

Got a self cleaning oven with one of those Lakeland miracle plastic cut-to-fit-bottom-of-oven thingies.

"Roast beef for din-dins, dear?" say I
"Lovely" say's OH
"It's got that nasty butcher's fat on it, I'll just remove it" say I, brandishing a knife.
"Nooo, leave that on, the meat is lean, it'll need basting" says OH
"It's silverside and the added fat is gross and unnecessary!" Say I

I lost; the whole thing went into the oven.

Long story short: billowing smoke, spitting fat, acrid stench, draining, swearing and very cross me.  The oven still stinks and has tainted a pie I subsequently cooked. Cue more swearing, general surliness and a quiet OH.

Can I clean a self-cleaning oven?

If not, how do I get rid of the smell and the cross-contamination.  I bake for the shop in that oven and have had to switch to the other oven (we have a range cooker) which is normally the meat oven and... oooh <spasm of irritiation> POO TO BUTCHER'S FAT WITH KNOBS ON!

Sorry. Calm now.  <sigh>

*sigh* Wish I had one, just googled and this is what I found...

Self-cleaning ovens assist you by making spills easier to clean. Depending on the make of the oven, you take out the wire oven racks, set the timer to clean mode and in 2-6 hours your oven is done with its self-cleaning. Some ovens, during the clean mode, will produce smoke and or fumes, so be sure to open windows and ventilate well. After the oven has cooled from the self-cleaning process, you are now ready to wipe the oven interior clean. The self-cleaning oven turns spills into a gray, ash residue. All you need is a lightly dampened sponge and wipe. Simple? Yes!

In addition to cleaning the interior, be sure to clean the inside of the door. Scrub the seal around the door with a gentle cleanser. Rinse the gasket with a damp sponge.

Thank you!  I'll dig out the manual tonight.  Just between you and me, I was lead to beleive that the rough oven sides meant that nothing stuck to them, ergo: self cleaning.
