I made some of this a few weeks ago using green toms, and the response from the family was so good it's all gone (5 jars worth - none of this waiting around for it to mature!).  With desperate pleas of "we want more" ringing in my ears and having no more green tomatoes left I replaced them with marrow chunks (4 lbs deseeded and chopped). 

The result - a slightly different texture but equally tasty.  Thumbs up all round, and a happy family once more.  Thanks Supersprout for the orignial recipe - it will be one of my most used I think!

clever salpott, amazing what passes for mangoes! ;) thank you for a great wheeze - I'll try it with overblown round courgettes ;D

Being far lazier (and messier) than SS, and not owning a passata maker (yet ;D)  I chopped the toms and cooked them down a bit,  threw the vinegar, dates and raisins in at that point (all uncooked),  used honey instead of sugar,  didn't blitz the ingredients down...

and it's still turned out delicious!
