Preserving beetroot glut

Hi all,
        I was wondering if anyone could tell me what I can do with a glut of beetroots,  I HATE pickled ones but love fresh.
    I have been eating them every day for weeks ::)
but would like to keep some for winter and the only thing I know how to do is pickled in vinegar.

I had a glut last year. I made some beetroot relish, essentially beetroot, onions, sugar, vinegar and seasoning, sorry no recipe. Also I boiled a lot and cut it into small cubes then froze it, it was ok kept that way.
The impossible is just a journey away ...

Are beetroot not one of those veg you can store in cool frost-free conditions in sand or in a clamp outdoors?

Clamp them... damp sand is the thing

Damp??

Oh, alright - "Remove foliage close to the crown. Place in layers in boxes, crates etc separated with a damp, but not wet, packing material. You can use sand, coir or even leafmould but probably the best is peat."

But some don't say 'damp'.

I still have some from last year, slightly damp peat in a plastic crate in the shed
