Soft Veg

Hello to all this is my first post after lurking here for some time. I am fairly new to this lark  (2nd year) and this year grew Carrot, Cucumber and Celery for the first time.
On Harvesting these veg I have noticed that they go very soft after as little as 24 hours out of the ground. The carrot in particular go very soft by which supprised me. Is this normal ?

Think it comes from being fresh, no preservatives.  Just pull what you need and freeze the rest.  Found with the carrots, by peeling them asap and putting them in a sealed container in the fridge they kept ok.  The cucumber I always keep in the open on the fruit bowl, not in the fridge.  The celery you can leave the root on and if you have a big enough container like a jar or vase put the whole celery in it with water in the container.

So this is just a normal situation for some non industrial Veg.

Yep, I was on a train once goggling at the chap next to me who was reading tables and tables of transpiration rates for different types of broccoli :P
