Using a pressure cooker to preserve tomatoes

Has anyone out there done this?

I have done some research online and found some instructions which mentions using lemon juice/acetic acid and sugar to help with the preserving method.

I have very limited freezer space, so making a big batch of pasta sauce and freezing it is not an option.

One of my lottie neighbours puts the whole toms in hot jars and  boils the jars in a pan of water but  she has now moved on and so I can't check the correct instructions.

All advice greatfully received  :)

Hi little bean
Have you considered making passata out of your toms?
I've put a thread here if you're interested :)

Hi Supersprout

I am very grateful for your answer to my query.

Since posting the initial query and doing some more Internet research I had loads of questions and your answer with the link to your previous post has answered most of these questions.

I'm gonna buy the Bormioli passata jars and the preserving jars.

I am a happy bean!

Will keep you posted as to my success in making the passata etc.

Aww so glad there were some ideas there little bean :)
Off for another three pallets of tom harvest this morning, thinking of rods and backs ;)
Hope you enjoy the bottling - and the result from your own home grown toms!  ;D
