if any of you are into fresh juices (as well as stored ones) this could be the time to try with surplus produce around - I have an old Kenwood juicer that actually peels the produce as it juices and you are left with a pulp that can go stright onto the compost and the remaining juice is sublime

beetroot, apple and cucumber juice - 2 beets, 2 apples, 1 cuc (and you could add a bit of ginger to give extra buzz) - all juiced together and diluted with a sparkling mineral water will knock your socks off in the morning  :o (if they need knocking off that is)

Good idea calendula!  I will dust mine off.  It only tends to come out when the apples are ready as I often juice a load and freeze the juice.  With the amount of cucumbers I have, I could certainly give your recipe a try!

I have made Blackberry cordial 2 weeks running, makes a change from the shop stuff.

Grant, how do you make your blackberry cordial please? :P

Grant

Adapted a recipe because I am drinking it every day.  Judge quantities.  Take a good portion of Blackberries.  To save time mash them in the pan.  Add water amd sugar to taste.  Add some cloves and a stick of cinnamon or powder will do.  Boiled all these together until syrupy consistensy and then passed through a sieve.  Bottled it and then diluted 1 part to 4 parts water. 500ml bottle lasted 5 days diluting it 5 times. Will try and find the original recipe for you.

Found the original recipe.  It is in the Setember Country Kitchen.
1.25lb (600g) Blackberies
3.5oz (100g) Sugar
2tsp Cinnamon pieces
2tsp whole cloves
Mash the fruit and put through a sieve, pressing the fruit with the back of a spoon to extract as much juice as possible.  Put liquid in a saucepan and to every half pint (300ml) of liquid add 3.5oz (100g) sugar.  Add the cloves and cinnamon.  Bring to the boil and simmer for 20-25 minutes, stirring regulary as the liquid reduces and thickens.  Strain through a seive to remove spice pieces and pour into clean sterilized bottles.  Store in the fridge.

the list could be endless - my version of a bloody mary (aka scary mary  ;D)

3 tomatoes
1 clove garlic
1 small cucumber
dash of dill
1 small red chilli
large slosh vodka

phew  :o

also, raw vegetables, if they don't look pretty enough to cook and serve are best juiced - try a mixture of carrots, celery, parsley apples and cauliflowers - fab

love the blackberry rx, I'll be trying this soon
