Chard Aloo for Emaggie

From Madhur Jaffreys book, Indian Cooking.

2lb (1kg) Chard,(or spinach) trimmed and shredded
4oz Onions (110g) Peeled, cut in half and sliced thinly
5 tablespoons vegetable oil (I use less)
2 teaspoons black mustard seeds
2 cloves garlic, roughly chopped
18oz (500g) potatoes peeled and cut into 1 inch cubes (these are optional in my house!)
1/8-1/4 teaspoon cayennes pepper
1 teaspoon salt


Heat oil in heavy large saucepan over a medium flame.
When hot put in mustard seeds, when they start to pop, put in the onions and garlic. Stir and fry for 2 mins, add potatoes and cayenne, stir and fry for 2 mins.
Now add chard (or spinach), salt and about 4 tablespoons water.
Cover with a lid and turn heat to low, giving the chard a stir every now and then until wilted, and cook gently for about 30 mins or until the potatoes are cooked.
Make sure there is always a little liquid in the bottom of the pan to prevent burning.

Great recipe DP! Thanks! I've got to disguise chard for the rest of the family ;D Seems like I'm the only one that likes it just as it comes. ;)

Ooh Doris you star !Many thanks for that. Tomorrows supper  I think.
Gave some chard away today,but maybe I can force them indoors to eat it this way!!! ;D
