You would ask that!!  That's my stock mix. After that, looking at Delia's proportions (unknown spice mix):

Rounded tsp spice to 1lb flour.

Don't forget the currants or sultanas (my preference) & mixed peel (not vital, I think)?

Thanks Tim  :-*  Off to get them started!  Will let you know what we think, a non mixed peel lover here!

I made hot x buns once, way back when I'd only just started playing with yeast. Was expecting these magnificently huge bundles of goodness, and they turned out really small. Very yummy tho. Haven't made them since....don't know why...I'm making easter cookies for work at the mo. Half non flour, for the girl with wheat allergies, and the other half...dunno, Haven't done them yet, but they'll have all the fruit and spice in 'em...and I've some new cookie cutters to try out! ;D ;D ;D

Doris, this is not exactly a 'family' recipe, but I have tried and tested it a few times recently:

500g strong white flour, plus extra for dusting
1 1/2 tsp Salt
75g caster sugar
7g sachet dried yeast
300ml milk and water mixed (have tried just water and it was fine)
230g mixed fruit
2 tsp ground Spice (half mixed spice, and half nutmeg)

I don't add the fruit till the second rise. I have been making this mix in to a lovely big loaf and don't bother with glaze or crosses. Lovely just out of the oven with loads of butter!

I have also halved this and made a small loaf successfully. Actually I usually make a loaf and a couple of buns, so I can sample it ASAP after it comes out of the oven  ;D

Must make another batch for the weekend!
Lottie-less until I can afford a house with it's own garden.

Ok, so now when I get home from work, I've gotta make hot cross buns too :o. (or maybe for breakfast tomorrow...they can have their first rising while I'm planting my strawbs.)  They sound so yum moggle. Except that I just put all my mixed fruit into biscuits. D'oh. Have to buy more!
