Stuff'em, I say!

Tim, my mouth is watering  ;D 

What would people stuff them with?  I have not stuffed veg before...

Brown rice, breadcrumbs, onion, carrots, celery, garlic, chilli, red kidney beans, lentils, raisins, pine nuts, herbs, seasoning - &, of course mince - if you're allowed it!

Cover with home-made tomato purée & bake till tender. Grated cheese if you wish.

Classic way (but cut the peppers lengthways)...chopped tomatoes (those from your freezer are fine) + chopped garlic + chopped chilli (both home-grown) + shredded anchovies (ooh, have to BUY them! - Sainsburys are good) drizzled over with olive oil (another buy :o)........bake until peppers are al dente. No need to add salt - anchovies will provide. Eaten at room temp as a starter, too, is delish.

This is my most fave way of cooking peppers  ;D

Wow, my mouth is still watering...  ;D I have a pack of pepper seeds and sowed 6 in pots last weekend, no sign of germination yet, but my book says it can take 14-21 days, so I need to stay patient...  I hope they are successful, as home grown and stuffed peppers sound fantastic.  Tim, thanks for your recipe; it sounds great.

Couscous, yes - but I would replace the rice with it?

Breadcrumbs I would only use if there's a good bit of liquid to absorb, or to achieve a slightly different texture.

If you were to put all the ingredients in, you'd have too little of each to make it interesting - I think.

Tim, I agree on the amount of ingredients, there should be a dominant flavour for the stuffing, and every ingredient should reinforce the flavour.

My OH is vegan & I stuff peppers & courgettes with a morocann rice recipe.  soften onions, mushrooms, peppers, garlic etc. add rice and loads of moroccan spices ( you can get a jar with mixed spices) cook for couple of mins till rice goes transparant, add some hot water (never measured it, use common sense, add more during cooking if needed) and cook until rice is soft, season to taste, add some vegan parmesan (or you lucky people can add real parmesan or other hard cheese) stuff yer veg and put in oven covered with foil (so dont dry out) for 20 mins or so, if your not vegan, u can finish off under grill with a cheese and breadcrumb mix.
I thouroughly recommend those asst jars of spice, african, morocann etc u can find them in netto and aldi and places really cheap

FWIW, I sometimes use jumbo oats to replace breadcrumbs, but they need toasting well in a dry pan first, or it ends up, not unnaturally, the consistency of porridge.

Having spent a lifetime using acronyms, I should feel comfortable with them now, but I always seem to struggle. One this occasion, I was lost too  :D Images of peppers being cross examined in court ...
