Posted on here a long time ago, by Allotment chick (where is she now?) and on the BBC site over a 100 years ago. But since the Blackcurrants are now ripening nicely I though it was time to repeat it.
Blackcurrant Cake
3 ½ ozs soft margarine
7oz caster sugar
1 egg, beaten
½ teaspoon vanilla extract
8oz plain flour
2 level teaspoon baking powder
¼ level teaspoon salt
6 tablespoons milk
4 oz blackcurrants
granulated sugar for sprinkling
Cream margarine and caster sugar. Beat in egg and vanilla. Sift flour, baking powder and salt, then fold in. Add milk and stir in fruit. Put into a 8in diameter cake tin lined with non stick paper. Sprinkle with granulated sugar and bake (350 degrees F, 180 degrees C, Gas Mark 4) for about 50 minutes. Cool slightly and remove from tin
Enjoy warm when it is at its best!
If using frozen blackcurrants don't defrost them - just add straight from the freezer!
Can also be done with redcurrants, blue berries frozen strawbs, and raspberries. Plums, greengages make the cake too soggy. Tastes ok though.
Anne only used 4 oz of sugar and that works just as well.

That sounds delish, I do not have blackcurrants myself, BUT, am looking after fellow lottie holders plot for 2 weeks, they said pick whatevers ready, and yeah, they have blackcurrants! HURRAH!

Worked well with blueberries (dont worry bulk bought frozen and cheap!)

Made 2 in loaf tins yesterday (extra 15 mins approx in cooking time) and they are LOVELY, thought they would be nice with blueberries too hex, and raspberries, or a mix of all 3? ;D

Eric, your cake sounds wonderful, I am hoping to make it tomorrow. Would it work with gooseberries too? I have loads and quite fancy a goosegog cake...

Never tried it as I cannot eat gooseberries. If they are very ripe then it should work, but if they are very tart you may have to increase the sugar.
You could try making an individual bun size with them to see what happens and what alterations to the recipe you need to make.

Made this cake last night and it has all gone. Had to cook it for longer than said, may be my oven, but OH ate his warm with cream. Am going to make it again with redcurrants this time. I know this is an old post but am trying to use up stuff at the bottom of the freezer.

good idea, barlotti, I've a few left over from last year so making a cake will use them up, in fact I've a few blueberries and raspberries ;D
