Simple Turkey Noodle Soup

Having half a Turkey Crown left over is always difficult to find something tasty to use it in but this Turkey Noodle Soup is Light, with  bitter sweet Asian flavour and a bit of chilli kick after taste.

225g of Fine Chinese Noodles
1 tsp Sesame oil
1 tsp vegetable oil
1/2 tsp fresh grated Ginger
1 Garlic clove finely chopped
1/2 tsp fresh Red Chilli chopped
3 spring onions sliced
1 stick celery sliced
4 tbsp reduced salt soy sauce
2 tsp runney honey
1 finely sliced lemon grass stalk
100g sliced Oyster mushrooms
3 small chopped carrots
1.5 litres of Good quality chicken stock
freshly ground black pepper
200g cooked Turkey,shredded
1 tbsp chopped Coriander



Assemble Ingredients

Cook the Noodles in boiling water,should take bout 4 mins,
drain and refresh in cold water.



Meanwhile in a saucepan,heat both oils over a medium heat,then add the ginger,garlic chilli and spring onions and cook for a further 3 mins stirring constantly.
Add the soy sauce, honey,lemon grass,mushrooms,carrots,celery,coriander and chicken stock,bring it to the boil and then simmer on low heat for 10 mins.
Season with black pepper to taste.

Add the cooked noodles,and cooked Turkey and heat through.

adjust seasoning to taste  !!!!!!!!!!!!!!!!!!!!!!



Serve and sprinkle more chopped spring onion, chilli and fresh coriander on the top.

 The soup was an ideal flask warmer along the river although I did have a snipper moment with the scissors as it aint the done thing slurping on
foot long noodles all down ya chin sitting at the river bank. 




This is Chertsey bridge its normal average is 2.4 m and you can walk along the path under the first arch,well at the mo its 4.3m
and always creates big swirling back eddies that the fish hide in.



Crept upto the waters edge 100m downstream and lobbed in a big chunk of bread/cheese paste for Chub and Barbel......nada though,but did have a few tentative plucks on lobwoms.
Too much debree in the water really but just needed to get out.

Me mum lives 1 mile up river and her low lying Bungalow is at flood risk  @ 4.8 m so naturally she like all along the Thames Flood plain are worried,and yes,I spent yesterday morning putting "stuff" in her loft and packed her an overnite bag just in case.

as for the fishing......El blanco to finish the season off for me.

As always Gaz that looks divine. A good idea for leftover chook, methinks! I didn't do the Xmas dinner this year so no leftovers.

Loved the photos, Gaza, as always!  Hope your mum's bungalow will be OK.  Now  I've plenty of space in the freezer (having lost all the contents, see elsewhere) I'm    inspired to do lots of different soups.  Normally I don't have that much room for soup, but there's no stopping me now.  Must go and dig up some parsnips, and all the Jerusalem artichokes, and some leeks and get cooking.  Might do some Turkey Noodle Soup as well!

Inspired by your recipe, I used our leftover turkey for soup yesterday.  Didn't make it Asian, but with a bit of chili, cabbage, carrots and pepper, green beans from the freezer, onion and garlic, it was a very nice quick dinner.  I crumbled a bit of leftover cheese on top which made it very yum.  I was surprised how nice the actual stock was too.  Tasted better than chicken soup to us.
