Red currant suggestions

Found this thread from last year http://www.allotments4all.co.uk/smf/index.php/topic,68195.0.html but was wondering if anyone had any suggestions for red currant use, I have about half a kilo only picked today so not really enough to go into the jam making business. My kids have tried them raw and weren't overimpressed, I mean they are quite ripe but are still too "acidic" (their definition) for their taste. I don't have an ice cream maker and having tasted them I'm not sure they'd be receptive to finding them hidden in muffins, but that's what I was thinking - any other suggestions?

I just mix them with other berries & ad fromage frais. I am on a diet though ;D.

Summer puddings and whatever fruit mix that could do with some added acidity. With apples in crumble perhaps. Smoothies with bananas and yoghourt. Redcurrant jellies and jams. Mashed and simmered briefly and stained for a summer drink.

I put them with apple juice and zap them in the microwave, they are popular here with turkey or chicken.

I make a topping with them and use it on the top of cheesecake, and of course red ci=urrant jelly to eat with pork

Like Jan I just mix them with other fruit.I know that jam makers love them for their pectin

Make a fruit coulis from them, nice and simple!

5 times fruit to sugar in a pan with some water (100ml to 250g fruit), boil till fruit bursts, allow to cool for a few mins (so your not dealing with a boiling sugar/fruit combo), then blitz in a processor. Sieve and press the mush in the sieve through with the back of a spoon to extract max juice. Serve hot or cold, I use it cold drizzled over ice cream or pavlova.

Store in a fridge or freeze.

Or some refreshing sorbet . .

Red Currant Sorbet

Ingredients
2 cups red currants
1 cup water
1 cup sugar
Juice of 1/2 a lime


Instructions
Bring currants and water to a boil and simmer for 10 minutes
Pass berries through a food mill
Pour the leftover juice and pulp back in the pot
Add the sugar and lime juice
Simmer until the sugar has dissolved, about 5 minutes
Let the juice come to room temperature
Take the juice for a spin in the ice cream maker for 20 minutes
Stick in the freezer for at least an hour
Enjoy!

A friend who's a chef has done a tea party today for a couple in their 90s & they requested Eton Mess with strawberries, raspberries & red currants. I was happy to oblige from my freezer for the red currants. She has reported back that they all loved it ;D
