I was sort of thinking jeruselem artichokes or something like that? I have a bit of allotment next to the fence that has a small cob nut tree , and some other trees growing, just like to use every inch!! ;)

If by some chance you do not have any rhubarb then you could try that.

Wilmot of Isleworth, a 19th century fruit grower and market gardener, discovered that he could get early rhubarb by growing it under (deciduous) trees.

I have 2 x gooseberry bushes and a redcurrant under a mature apple tree.  They give good crops.  I think they are actually woodland margin plants in their natural habitat.

I tried rhubarb in the same situation but I moved it as it was struggling.  It's doing well now in a richer soil, in partial shade, but much more nutrients and moisture.

Jerusalem artichokes grow rather tall..so depending how how much room you have under that tree..but be prepared that JA's can grow 8ft tall if even more...

I would recommend fruits bushes too...or raise bed with strawberries..herbs..flowers..salads...
