Would anyone like to share cup cake recipes?

I know it is a bit of a trend LOL, but I love baking. I tend to bake a batch to take to my team meeting Wednesday mornings at work. Goes down well with the staff and prevents me from gobbling up the lot. So far this term I have done: malteser, almond and honey, chocolate mudcake, vanilla, toffee, chocolate beetroot, crunchie and just made some white chocolate and baileys ones for tomorrow.

My aim is to make a different type for each week of term for the duration the year. Does anyone have any favourite recipes?

Pineapple with crean cheese frosting,,pretty good.

2 slices of canned pineapple

85g /3oz butter
85 gr/3oz caster sugar
1 large egg. beaten
85gr/3oz SR flour
1 table spoon /15ml pineapple jiuce from the can
100 gr/31/2 oz soft cream cheese
grated rind of 1 lemon
100gr/31/2 oz icing sugar
1tsp ?5ml lemon juice.

You can nuse lime juice instead of lemon if you prefer for both above.

Oven to 180c/350f/gas mark 4

Chop the pineapple fine.
butter, sugar, beat till light and fluffy, gradually beat in egg,fold in the flour and combine gently.fold in pineapple and pineapple jiuce.

Spoon into 12 cases.

Frosting

butter and cream in bowl, with electric whish beat together till smooth, add rind,sift icing sugar in,beat till well mixed then gradually beat in the lemon juice.

When cakesa are cool, frost  and enjoy..

I just make big cake recipes but cook them in muffin or bun tins.  Easy to freeze thesurplus and a boon when Possum was little and needed a healthy morning snack for school.  She wouldn't eat fruit so I gave her banana cakes, chocolate carrot cakes and all sorts of goodies she never knew she was getting.   A recipe for 10 " carrot cake makes 30 buns or so cup cakes or 18 to 20 muffin sized cakes.

One very easy recipe is for

Coffee Kisses

These are not strictly cup cakes of course but the finnished product can be placed into cake cases to serve. Also, the recipe works well using gluten free flour.

Ingredients
6oz flour
2oz sugar
3oz butter or margarine
1 tsp coffee essence (make it with hot water & teaspoon instant coffee)
1 egg yolk (or a whole egg if it is small but a yolk is better)    

Method
Pre-heat oven to 160C.

Mix margarine and sugar together.

Add the rest of the ingredients and mix all together.

Roll the mixture into small balls and flatten slightly. Place the balls, evenly spaced on a lightly greased baking tray.

Bake for 20 minutes in a moderate oven (around 160C).

Sandwich two halves together with coffee butter icing*, and you have a kiss!

*Icing:

2 oz butter

4 oz icing sugar

2 tsp coffee essence
