Any hot sauce recipies?

Hello all...

I'm wondering if anyone has a recipie for a good hot sauce?
We've had a wonderful chili harvest this year and I'm keen to try and make some bottles of hot sauce to keep us going over the winter months. The thing is there seem to be so many different recipies online that I'm lost as it which one to pick...
I'm thinking that there's probably a decent underlying sauce recipie that we can add as much chili too as we like and that'll be that. We like that Encona??? stuff you can buy in supermarkets so that's the kind of thing we're trying to emulate...

Does anyone have any proven recipies they'd like to share?

I make some chili sauce every year but measurements are not really my thing so this is not exact.

I chop toms, onion, garlic, chili (maybe some ginger) add to a deep oven tray and roast for 40 mins on about 140 or until it looks done.

Then I put it through a food mill (or through a seive with the back of a spoon).

I hope fully end up with around a pint or so of  sauce at this point but it wont keep...
So I add around 150 g soft brown sugar and 200ml of cider vinegar - heat and reduce to the desired consistancy and bottle into sterlised sauce bottles...

I have some better quantities written down at home somewhere...but the joy of this is that you can add as much chili or other spices as you see fit.  I have some dried ground homegrown chilis to add in the final stage to get the heat I wont!

that sounds good Nick. A friend's Dad used to make a huge batch each year, and sadly when he died he took the recipe to the grave. I still miss him and his pepper sauce  :) And have never been quite able to recreate it!
