Baked Beans

Just enjoyed some of my own beans.  Though I would share the recipe with you.  It uses up some of those things you don't want to waste. 

1/2 cup of dried beans
Soak dried beans over night in fridge, throw away the water.
Fry 1/2 onion and some lean cooking bacon (optional)
Add beans
The bits cut off some fly damaged carrots
Some rather tough celery or the green bits you normally throw away
A couple of windfall apples or some apple juice
A tin of chopped tomatoes
(I usually add a few green ones too but have none this year)
A tin full of water
A teaspoon full mixed spice
A teaspoon full ginger
If you omit the bacon you might want a little salt in it.
Pressure cook for 15 mintues.

thanks for posting Digeroo - I would never have thought to add ginger or mixed spice so will have to give that a go

Sounds good Digeroo, just wondering how long for regular type cooking? I've never used a pressure cooker so can't really equate. I was thinking after soaking the beans to give them a thorough boil and then cook everything for about 3/4 hour or after combining ingredients finishing in the oven. What do you think?

I was thinking about having a go at making baked beans with leftover french beans I have let seed to collect.

Now there is a recipe you wont find in any book innit?

As I do not have any carrot fly damaged carrots, seems I will need to wait until next year to try it...... ;D

the recipe sound great i will give it a try.

Obviously any carrots will do, but it is great for using up bits of things.

It was designed for my daughter who cannot eat wheat or sugar.

I have also been using some of my own grown beans and find they are not very windy.
