I have some well established rhubarb plants which I don't want to move, but I want to make that area into a raised bed. If I just cover the plants with about 8inch of soil, will the Rhubarb grow through it okay??

Yes it should be OK, but manure would be better, but I'm sure you don't have to bury it that deep, could you not top it up around the plant at a later date.   :-\ :-\      ;D ;D ;D

yep it should be ok as i cover mine with a pile of manure in winer it appears again

It's tough stuff, and it won't have any trouble growing through that.
