Yet another potato chitting question

This might have already been asked but I have noticed that organic potatoes start to chit a lot earlier than non-organic. Is there any reason for this? I have found that even organic maincrop potatoes start chitting very easily.

Yes, commercial growers use grow retardant chemicals to prevent sprouting so that they have a longer shelf life in the supermarkets...   ::)
