My favourite courgette recipe: Chocolate cake!

This is my favourite choc cake recipe. Don't know if something similar has been posted already, if so apologies.

Chocolate courgette cake
370 g flour unsifted
58 g cocoa
2.5 tsp baking powder
1.5 tsp baking soda
1 tsp salt
1 tsp cinnamon
170 g soft butter
465 g sugar
3 eggs
2 tsp vanilla
2 tsp grated orange peel
560 g coarselyshredded courgette (skin and all)
125 ml milk
250 ml chopped walnuts (100 g)

Glaze: 500 ml icing sugar, 3tbsp milk, 1 tsp vanilla

preheat oven to 160 degr. Combine flour, cocoa, baking powder, soda, salt and cinnamon, set aside.
Beat together butter and sugar, add eggs one at a time, stir in the vanilla,orange peel and courgette.
alternately stir in the dry ingredients and milk,including the nuts with the last addition.
Pour in a 10 inc tube tin or bundt tin. Bake for about 50 mins or untilwooden pick comes out of center clean. Cool 15 mins in pan. Turn out and cool. Drizzle over glaze. Serve in thin slizes.YUM!

That sounds great. Can't wait for my courgettes to come on to try it.

I am not keen of orange with chocolate so I may leave that out, add more chocolate.

Does it freeze do you know?

I make something very similar but with marrows.  I don't put orange peel in and I don't glaze it.  It is delicious and it freezes well.

thanks for that. Always nice to have something to do with the extras. Especially when the things go from flower to marrow so quick.

Marrow, courgette, zucchini, all the same really.

It freezes very well, in fact in the original recipe it states that it only improves the cake to freeze it.

Are you sure about the amount of sugar? that's a whole pound for 175g of butter???? Seems too much to me! (but  a great idea!! I think I will try converting my carrot cake recipe to use courgettes, maybe add cocoa or more spices like ginger... If it works I will post the recipe ;)

I didn't notice the volumes when I first read it, but you are right. More sugar than flour is not normal, wonder if she pressed the 4 key instead of the 1?

Common error when using the number pad.

Wanted to try this and the courgettes have so many flowers I am going to get  loads.

    I have just found this one on another site. It also has quite a lot of sugar.

chocolate courgette cake

Preparation Time: 10 mins
Cooking Time: 45 mins

Serves: 6

Ingredients

120g butter (softened)
125ml sunflower oil
100g caster sugar
200g soft brown sugar
3 eggs, beaten
130ml milk
350g plain flour
2 tsp baking powder
4 tbsp cocoa
450g courgettes, peeled and grated finely
1 tsp vanilla
   
Instructions

This recipe is a great way of getting children to eat more vegetables and has been a regular feature on the lunch menu at School and the children seem to love it.

1. Line a 20 x 35cm baking tray with baking paper and set the oven to 190ºC/350ºF.

2. Mix the butter, oil and both sugars together until light and fluffy. Gradually add the eggs, one at a time and then the milk until mixed thoroughly.

3. Sift the dry ingredients together and fold into the mixture. Stir in grated and peeled courgettes, vanilla and spoon into tin. Bake for 35 -45 minutes.
