Coq au Vin

Hi Guys,

I am fed up seing a my OH recipies on the backs of envelopes and though i would share

2 chicken breasts
100g shallots
3 cloves of garlic
15g butter
100g streaky bacon
300ml good red wine
1 tbsp balsamic vinegar
flat leafed parsley ( a couple of sprigs )
Thyme ( a couple of sprigs )

Heat casserole dish, add butter, shallots and galic and cook gently until just browned.
Add bacon and thyme cook for 2-3 min.
Add red wine, chicken, stock and balsamic vinegar.
Add chicken, bring sauce to boil and simmer gently for about 25 min or until chicken is cooked through.
Add parsley, small thingy of butter, seasoning.
