I sometimes make a fish crumble - the usual base with what ever fish you want, and then make a norrmal crumble topping -missing out the sugar, and replacing some of the flour with the oats. You can add some cheese into the crumble topping to make it even better.

mmmmm like the idea of the fish crumble with added cheese - must try it ::)

If you look on the Mornflake website there are quite a few recipes on there. Thats where I got mine. You could always try the Quaker oats site too. i'm sure they will have some good ideas
When I get old I don't want people thinking
"What a sweet little old lady"........
                             I want em saying
"Oh Crap! Whats she up to now ?"

One of our favourites is a sort of oat pancake.

Equal quantities of wholemeal flour & oats, tsp baking powder, salt - all in a bowl, mix in an egg & some natural yogurt then some milk to make a fairly stiff batter.  Fry large spoonfulls on both sides till crispy serve with scrambled egg & bit of smoked salmon or gravalax which I made for today.  Yummy.

perfect flapjacks : 4oz butter, 4oz sugar, 3oz golden syrup, 8oz oats. Melt butter, sugar & syrup together in largeish pan, add oats, mix together. Pour into lined square tin and bake at about 180c for about 20/25 mins.

tweety pies : 6oz butter, 4oz soft brown sugar, 8oz porrigde oats, 2 tablespoons of honey. Extras : sesame/pumpkin/sunflower seeds, coconut, sultanas, whatever you fancy!

Makes about 18 pies.

Cream butter and sugar together, add oats and stir in well. Mix in honey and your extras. ( i like the works!)
I use a fairy cake tin for these, lightly greased with oil. Otherwise you have to try and slice it and they stick to paper cases!
So, with a spoon and your hand work the mixture into a ball and pop into the tin and press down. Bake at 190c/375f/gas 4 for about 10-15 mins. Leave to cool and use a knife to lift them out. The longer you bake these the crunchier they will get. They also keep very well, up to 2 weeks in airtight tin.
Don't throw paper away. There is no away.

You can also cook flapjack in the microwave - 3-5 minutes depending on your microwave strength. Mine is prehistoric and is about 5 watts, so an 8inch round dish takes about 5 minutes.  It's ready when it just starts to bubble up, still looks like it needs longer, but it burns easily, so best to take it out sooner and have chewy, unless you like it crunchy like granola.....

Same with that recipe, it looks like it needs longer but it just goes rock hard if you give in. Bring it out while it's nice and chewy. mm mmm! And 'healthy' all that sugar and syrup is negated by the oats right?  ::)

It's even better with choc chips in, so good for you.... :)

I let my flapjack mixture cool a little before placing in the tin and then spread roughly half in, pour over chocolate chips and smooth the rest of the mixture on the top, just to make sure they are evenly spaced through the flapjack.

I make 11 x 7" tin and use a whole bag of choc chips, ummmmm. ;)

You can also coat the whole top with choc before slicing it up. This i believe is the healthiest option, combined with choc chips, you can't go wrong!

Ummm, sounds just what I need..... ;)  Think I might just have all the ingredients for that....

I am sorry, Roses for hijacking your thread! :-[

Or you could go half-healthy, half-naughty and cut it into squares then half dip them in melted chocolate - more of a hassle, but all that energy that goes into making them needs replacing with a square or two?  (Or three, or four, or the whole lot!!)

Thanks again all! i  did have a cranks recipe for cheese jacks and they seemed to go down well ages ago! So might try and find those. I ended up making some scones with natural yogurt in  and some leftover glac`e apricots from Christmas chopped in. Which was on the back of packet ofScots oats (which i have always preferred to Quaker)I will try some of your recipe,s though so keep them coming

Lady of the Land

I use them when I make a crumble. I make up the weight of the flour with a combination of flour and porridge oats, the proportions often vary, but if you use equal weghts of flour and porridge oats it should be fine
