To make baba ghanoush you roast the aubergines whole until the skin is blackened. Then peel them of course! It gives the dip a delicious smoky flavour.

Mmmm all sound really good! I love aubergines. :-*
How about aubergine Tempura? Slice the aubergine and dip it in Tempra batter (really thin batter made with chilled water, plain flour, salt and egg yolk) and deep fry! This way aubergines become really tender, almost melting texture. I'm getting hungry now. ;D

Hello all,
I quite like getting a surprise in my veg delivery every week, although do have the option of choosing what I want from a list also...  I did have a vague moment the other week though when I received a kohlrabi and had never seen one in my life before...

I find the bbc website quite good for recipe searches (www.bbc.co.uk/food) and also sainsburys isn't too bad either (http://www.sainsburys.co.uk/food/food_ideas_homepage.htm).  But my fave at the moment is www.completerecipes.com.  Quite basic in that there are no fancy graphics or pictures but is by no means basic where the recipes are concerned!

As for aubergines, I can't say I've ever found the need for salting although it is often recommended. ???
