Rhubarb Brown Betty

Simple yet effective!

Mix together 100g breadcrumbs with 100g castor sugar & grated rind of 1 orange. Put 1/2 in bottom of ovenproof greased dish. Melt 75g butter & sprinkle1/2 over breadcrumbs. Chop 450g rhubarb into 2.5cm lengths & arrange on top of breadcrumbs. Pour over juice of the orange. Top with rest of breadcrumbs & butter. Bake 190C/gas 5 for 45 mins.

Can also be made with apples or gooseberries.

Today I used some of my rhubarb - cut last week but more than I needed then....made a sort of rhubarb charlotte (as I remember it anyway)

cut the rhubarb into small chunks, put into bottom of lightly greased oven dish - sprinkled tablespoon or so of water & about the same of runny honey over....popped into hot oven while doing the next bit.

cut 3 slices of bread into cubes (don't forget this is just for me) melted a good chunk of butter in saucepan, added cubed bread, mixed well & stirred. took off heat - removed rhubarb from oven.

Half hour before I served up my lunch - spooned bread mix over top of rhubarb, sprinkled with demera sugar & baked at 190c. By the time I'd eaten first course (lasagne) rhubarb charlotte was ready (very hot) stays crisp if you let it cool a bit...had it with creme fraiche - lovely!

Have enough left for tomorrow (if I don't pick at it :P)

Mmm, the brown betty sounds like a delicious alternative to crumble, which we always seem to get, as my daughter has an aversion to pie ...
The impossible is just a journey away ...

Sounds delicious.

Better stick to crumble this time though. The gentleman on the plot behind gave me some of his forced rhubarb today.  :)
