Squash when can we try them

Hi All
We have a large number of squashes on our plots
they seem to be about 5-6'' accross whitey ywllow skin and as we have so many we were wondering when we could try them - do you have to wait untill they have rippened

Hello.

May depend on what variety they are - summer or autumn squash? I've got pumpkin and butternut squash on my plot, and I've been advised (esp with the squash) to leave them as long as possible, until the foliage at least starts to die back (make them easier to find too!). Apparently if you pick them too early they have very little taste. Sometimes a balance between waiting for maximum flavour and not getting caught by a frost, I am told!

I can't add any more to that really, I am only growing winter squash and pumpkins, and courgettes (thousands !).  :D
