Don't understand what to "rack" is!!!!!!!!!!!!!!!

the  recipe says-

after 2weeks transfer to a secondary and fit air lock

then after 2weeks rack, topup and refit airlock

rack again in 2months then again in another 2months

rack into bottles and a store in a dark place for one year............

"Racking" means to syphon it off into another container leaving as much sediment behind as possible, the secondary should be a demijohn fitted with an airlock and 1 year maturing sounds about right, it really is worth it if you have patience.
You could speed up the process by using some fining's and filtering after fermentation has finished but I'd still leave it in the bottle for a year (try a bottle after 6 months)

thanks

I'll be 'rackin' it shortly

I'll let you know in a year how lovely it tastes!!!!

Does cherry wine usually take this long or was it just this recipe??????

What fruit is ready soon for making wine?are they quicker than a year...

I like a sip of booze :P :P

Sammy ,
ive got two gallons of cherry wine on at the moment , and im sure i wont be waiting a year to drink it ,
i usually wait for it to clear then drink it !
my recipe told me to put in some 'pectic enzyme' to prevent it from going hazy , which will also help it clear quicker.

i made a rhubarb wine some time ago and it was drank within 6 weeks of starting it  , so get another cherry recipe !

i use the beginners wine making book by C.J.Berry
