Halogen Oven Mediterranean Focaccia Bread

Decided on a basic white bread recipe with some continental additions for flavour....so..........

650g Strong White Flour
10g salt...or less
5g sugar
1 Tbsp Olive Oil
7g packet dried yeast or 15g fresh
400ml warm water

Mix the basic contents to a dough consistency and rest for 1 hour in a warm room.

so ....time to add additions that your taste buds enjoy.

I added...............

100g Sun blushed tomatoes chopped
50g Roasted Peppers Chopped
50g Olives Chopped
200g Strong Cheddar Cheese Grated
100g Parmesan Cheese Grated



Blend all the ingredients together,its got the look of a rocky road confection with bits of veg popping out everywhere.
make sure you leave some of the grated cheese mixture to top the bread when you turn it over.



Ready for the Halogen Oven............



As this is my first time cooking bread in the Halogen oven I decided to cook it on the top rack putting the dough on a circle cut sheet of oven cooking sheet...................



I shaped the dough onto the rack and placed it in the halogen oven.....remember this is one of Gazzers ruff and ready tearing style loaves so it does look a bit "Rural" and not something all squared off.



I guessed on cooking times and heat so chose.......

220 Degrees for 20 mins.......although as you can see it got a tad burned ....but hey ho....just learning and this will now be the bottom
so no problem....I guess cooking the bread on the bottom rack might be the way to go to avoid future burning or maybe place a piece of foil to deflect the fierce fan heat.



Anyway,I turned the bread over and sprinkled a bit more grated cheese on .

I turned the heat down to 200 degrees for a further 10 to 15 mins.



Ok,we have not got an oven fitted in our new kitchen yet so its fun watching everything cook through the glass.



Ok here we are ,.......my FIRST effort at bread making in a Halogen Oven,the outside is nice and crisp and the insides soft
with a speckled mixture of chopped veggies.



Gagging for it to cool I had a couple of slices with Black Forest Ham and some sweet cherry toms.

Delish !!!!!!!!!!!!!

Both mum and I sat and enjoyed it,,,,,so now ive made a fun style loaf ill have a go at a traditional white/brown in a tin
to see how that turns out.

Looks good Gazza - I have bread baking in the breadmaker right now but would love to hear how you get on baking in a tin in your Halogen.
