Christmas Red Mullet & Latke Potato Pancakes

Tis the season to be scoffin Christmas fish and Red Mullet is a really tasty seasonal  offering, the fried fillets sit on top of Latkes, a Jewish Potato and onion fried pancake, of course a crisp Walnut salsa is a must along with a smear of Rouille, a French spicy Mayonnaise elixir that finishes each mouthful perfectly......




2 x 1lb Red Mullet (Bream fillets are a good alternative)



De scale and Fillet the fish then pin bone



The Walnut Salsa is both seasonal and makes for a crunchy change.

2oz Shelled Walnuts crushed
handful curly Parsley chopped fine
1 x Shallot chopped small
1 x Clove Garlic Grated
2 x Vine Tomatoes chopped small
4 x Tbsps Extra Virgin Olive Oil
1 x Small Fiery chilli is optional but adds warmth



Bring the above ingredients together in a bowl and stir well then fridge.



1lb Potatoes Grated roughly
1 x Medium Onion Grated Roughly

Place Grated Potato & Onion Mixture into a clean tea towel and squeeze as much fluid out....so plenty of elbow greese  !!!!

Then add..........

3 Tbsps Plain Flour
1 x Egg
1 Tsp Baking Powder
salt & Pepper to taste

Mix it all together with your fingers and make an 8 inch approx
by 1cm deep Latke.



Shallow fry in Olive Oil and a good thingy of butter on a medium heat
for 5 to 8 mins each side,keep checking, so it doesn't burn to quickly as we
want the insides properly cooked through......

keep warm once cooked on a low heat in the oven.

Wipe the pan and reheat some Oil and a thingy of butter,season the fish then place the fish fillets in skin side down and cook for 3 mins before turning the fillets over Red Mullet is quite firm but will break up if treated roughly.

while that's cooking quickly make the following............




The Rouille Mayonnaise completes the meal really well......

so we need............of course this is my take on the ingredients used.

a good pinch of saffron threads soaked in 50ml water for 1 hour
150 ml Jared Mayo
1 Garlic clove minced
1/2 tsp Ground Cayenne Pepper
1 tbsp Tomato Puree
add a couple of Jared pureed Roasted Red Peppers for a richer flavour
salt and fresh cracked pepper, to taste

mix the above ingredients together and fridge briefly.......




Plate your warmed Latke and top with your Red Mullet Fillets,add a
good spoon full of Walnut Salsa and spoon a large blob of the Rouille
to dip with.........



Enjoy this Christmas Fish meal.

Sadly No Pauline,its a fish ive been trying to catch from Chesil Beach but on this occasion I asked our wet fish man weeks ago to source it as this time of year you can get good sized fish worthy of this recipe.

The flavour is stunning on its own just grilled,but as its Christmas week the Latkes are traditional fair along with the walnut salsa so I needed a fish in season to compliment them + the Rouille is one of those mayos you can splash on with confidence to most fish if you enjoy a bit of Zing !!!!!

anyway,was fun putting it together.

psssst...  test your mobility @ a place called Ferrybridge Pauline if you cant get over the shingle bank there get the Ol man to fireman carry you up N over and fish from there as youll catch likely catch some of these
dainty little Red Mullet for the pan..... :tongue3:
