Cajun Dogfish Crispy Bites(or other white fish)

This recipe although targeted the Dogfish/Huss/Rock salmon/Flake all local names for the same fish to different regions in the UK will also work really well with meaty textured fish like Monkfish or fresh tuna ....ok these are perfectly tasty on their own but now and again as a treat if you cant source the humble Dogfish try them as they work really well....of course any other firm fleshed white fish will be worth trying...................

As were all going to hammer out countless Doggies we better start munching our way through the beggers..!!!!!!!!

So this recipe helps rid the sea of this tasty pest.




Get yourself 2lb of skinned Dogfish/Huss and Debone the fillets and cut them into bite sized pieces and set aside.




The Cajun Spice mix is fairly mild but tasty,of course if you want it more fiery just add more cayenne pepper....the following are just about right
add them all to a pestle and mortar and ground them together really fine.

5 tsp Ground Cumin
4 tsp Ground Smoked Paprika
2 tsp Ground Thyme
2 tsp Ground Oregano
2 tsp ground Black Pepper
1/2 tsp Cayenne Pepper
1 tsp Flaked Seasalt

Right pat dry the Doggy bites and spray them with olive oil and add them to a plastic bag and cover them with 2 tbsps. of the Cajun mix.....shake the bag like hell and set aside.



Ok,we need a crunchy Salsa to compliment this and this is a simple combo
just mix together the following ingredients and set aside in the fridge.

1 small red onion chopped small
10 small chopped tomatoes
1 or more medium chillies chopped small
large handful of chopped coriander
1/2 tsp salt
juice of 1/2 a Lime




This wouldn't be right without a cooling Yogurt dip so mix together following and set aside in the fridge.

1/2 a cucumber skinned seeded and grated then squeeze all the juice out of the grated cucumber and put in a bowl.
8 fl oz Natural Yogurt
Large handful mint leaves chopped fine
salt to taste.




These Crispy Bites are perfect to load all the goodies onto so all you need is a pkt of flour Tortillas and cut them into triangles and heat the oven to 200 degrees,spray them with olive oil and oven cook them for 1 min each side....they should be half crisp and half softened....well you can make your mind up how you enjoy munching on them.



Right the cooking bit..........

Heat your frying pan to medium and add some oil,now cook the Dogfish Cajun bites in the pan cook for 3 to 5 mins...or until cooked through.



Ok time to eat..............

Pile a stack of the Tortilla Crisps on your plate,then add some of the Salsa and a large blob of the cucumber yogurt dip.....then finally add your fried Dogfish bites.



take your crisp and slide a spoon of the salsa on top followed by a Cajun doggy bite and top with the cucumber dip.....I tell you at this stage ive normally devoured 3 or 4 but if you can control yourself make a couple up for a side plate.



pass the plates out for others to try or ...better still just stuff your face with them all and tell them you dropped the plate...!!!!!!!!!!!!!

Cheers Goodlife,to be honest lifes been so hectic trying to prep 2 houses for a move to Dorset the kitchen has been barren of my presence in recent times......still after some recent sea fishing trips I decided to try this.

The nice thing about fannying about in the kitchen,is that you get to try recipes with all manner of meats and fish just to see if they work..!!!!!!!!!!

and ive tried cubed pieces of chicken or turkey and itll also work with small cubes of pork....just flash fry them the same its just the cooking time is altered ..I just cook (1) piece to test and once happy ....in they go...... :wave:
