Mediterranean Seafood with Tomato & Feta Cheese Sauce

A One pot meal always makes life easy,and this is no different once youve sorted out the contents.

Bass Fillet works really well as its a nice meaty fish along with soft Squid and Plump Prawns.

Ingredients for 2

2 Large Fennel Bulbs Thinly Sliced
5 Garlic Bulbs Sliced
3 Tbsp Olive Oil
2 Tsp Toasted And Crushed Cumin Seeds
2 Tsp Toasted And Crushed Fennel Seeds
2 Tsp Toamto Puree
100ml Tomato Passata
1 Tin Chopped Tomatoes
150ml Ouzo(Or an alternative Anise Alchohol)
1 1/2 Tsp Caster Sugar
2 Tbsp Dried Thyme + Fresh to Garnish
A few strips of Lemon Peel
4 Sea Bass Fillets cut into 3 inch pieces
1 Large Squid tube cut into 1 cm strips
10 Raw Peeled Prawns
150g Feta Cheese cut into 2cm cubes
60g unsalted butter
1 Tsp Chilli Flakes
1 Tsp Lemon Juice
Salt & Black Pepper

Olive Crushed Potatoes

200g New Potatoes Cooked
10 Black Olives Stoned and Chopped
salt & Pepper

Olive Oil Vinaigrette

150ml Extra Virgin Olive Oil
50 ml White Wine Vinegar
salt to taste
1 Tsp Garlic Puree
1 Tsp Dried Thyme Leaves

Olive Bread Slices



Lets make the Vinagrette,mix the olive oil,white wine vinegar,salt,Garlic Puree,and dried Thyme together and set aside till later.

Next,Cook the New Potatoes and set aside.



In a large frying pan,saute the sliced fennel and sliced Garlic in Olive oil on a medium heat for about 10 mins.

Add the Toasted Cumin and Fennel Seeds and cook for another minute.

Now,stir in the Tomato Puree,Tomato Passata,and the Ouzo.



Allow this to bubble away for a couple of minutes,now mix in the chopped Tomatoes,Sugar,Half of the Dried Thyme,Lemon skins,1 tsp salt and some black pepper to taste.

Simmer till the sauce thickens for 15 to 20 mins,if the sauce gets a bit pulpy just add some more hot water to thin.

Taste and season accordingly..!!!!!!!!!!!!

After 20 mins remove from the heat and take out the lemon peel.

Heat oven to 200 degrees....................



Season seafood.



Put the sauce into a large Ceramic dish,now season the seafood and place onto the sauce,press the cubed Fetta cheese into the sauce and sprinkle over the remaining Dried Thyme and put into hot oven on middle shelf for 8 to 12 minutes.



Remove from oven once seafood is just cooked through.


If you want a hot kick added to your dish melt some butter in a hot pan and add the chilli flakes and Lemon juice and drizzle over the Ceramic dish once taken from the oven.

Heat a frying pan and drizzle 2 tbsps of the vinaigrette and crush the cold potatoes into it add the chopped olives and season well.



Cook throughthe potato mixture  for the last 5 minutes cooking time of the fish dish.



Plate up the Potato mixture as you wish and surround it with the Seafood,butter some Olive Bread slices and use as a dip in the tomato and fetta cheese sauce.....""Scrummy  ""

I did a mussel, tomato and chorizo stew with smoked paprika and chilli served with some chorizo bread last week after getting back from Biilingsgate.

Had pan fried bream with mussel, prawn and creme fraiche sauce on Saturday with mixed veg, which also hit the spot!
