Chipotle Chilli & Parmesan Crusted Fish

Always enjoy finding a tangy paste to use on fish or Chicken breasts,plus oven cooking cuts down on fatty deep frying.



All you need is ................

100g 2 day old bread stick
100g sun dried tomatoes
200g Parmesan Cheese
2 tbsp Tomato Puree
1 tbsp smokey chipotle chilli salsa


Blitz the Bread,sun dried toms and parmesan cheese together.

Meantime mix the Tomato puree and chilli salsa together.



Ok,lets sort out what fish you want to use,today I had a smorgasbord of fish to try,we had..............

Conger Eel,Whiting,Cod,Rock salmon,and Sardines

All take the crumb well but youll just have to try your favourite fish to see how well it works.



Pat dry the fillets and smear them with the paste on top.

Heat your oven to 190 degrees.................



Pack the Parmesan Crumb around the fish fillets and place in the oven for 15 minutes.




Proper plate full.and yes I did share it.....well sort of  !!!!!



Homemade Tartar sauce ingredients

7fl oz mayonnaise
3Tbsp of chopped capers
3Tbsp of chopped Gherkins
1 Shallot finely chopped
squeeze of Lemon juice
3 Tbsp chopped fresh parsley
1/2 small tin of anchovies and oil
sprinkle of paprika

mix above ingredients together and fridge to cool.




Oh and it works real nice on Chicken breast..........



Chicky breast with paste



pack crumb around chicken breast.

Heat oven to 170 degrees and cook for 20 mins.

Just wanted to thank Gazza for photo recipes!  Most of them are not the sort
of things I would make (because I'm vegetarian) but I appreciate the time he takes
to put the recipes together and share them with us.

I do agree with you..photos make all the difference, just reading list of ingredients don't have quite the same impact.
Uh...I'm so hungry..those photos are killing me...just few more hours to go with fasting..and once the 'dear' nurse have drain every little drop of blood out of me..I shall EAT..and I'm going to do so while looking these photos.. :toothy10:
=healthy binge..mouth eats something frugal and boring while eyes are doing the feast  :icon_cheers: It might make the boring frugal option taste better :drunken_smilie:

Sorry Betty,I should have a serious word with myself as being of the Diabolic Clan I should try and cook more "vegetable" based foods,it is difficult though as vegan,vegetarian,nut allergy,wheat intolerant,....the list is endless and I have another half that is all but "OK" apart from her system not enjoying
pastry.so I tend to cook everyday foods,although I will try to cook something varied this year.

Anyway,thankyou for the thanks Betty,I dont want it, but just want to participate in a great forum and if the odd person gets around to cooking
something I throw together then thats fine  !!!!!!!!!!

By the way.......another subject.....CHIPS  !!!!!!!!!!!



My fav for chips is Pink Fur Apple,albeit this past season the skins had some scab on hence me having to peel them last night.

They are "Chip sized",normally and I just wash and split them in two for a tasty chip that on another night by adding some olive oil and seasoning and sprinkle in Parmesan also produce a lovely chip....I hope theres no scab this year as I prefer the PFA,s with skins on !!!!   Yum  !!!!!!!!!!!

Whats your favourite Chip for "oven cooking".....not fried though  !!!!!!!!!!!!!
