Garlic Potato 'n Onion creamy bake

I used potatoes, onions, leeks, baby corn and garlic from my garden tonight.. concockted this delicious dish..

GAVINS GARLIC POTATO 'N ONION CREAMY BAKE.


2 cups sliced small potatoes
1 cup sliced small crunchy onions
½ cup sliced young leeks
¾ cup sliced oversized baby corn cobs (optional added delicious extra ingredient to recipe)
3+ cloves diced garlic
Tub of cream
Margarine / butter
Salt & pepper


Slice potatoes, onions, leeks and baby corn. Dice garlic.
Smear some margarine or butter around the inside of a casserole dish.
Layer potatoes, onions, leeks and baby corn and add a sprinkling of garlic and salt & pepper.
Once all the ingredients are used add enough cream to just about cover the mixture.
Cover with lid and bake in a medium oven at 200° C for about an hour.
Test occasionally just to see if ready.
(I sometimes give it a bit of a stir whilst cooking)



Variations...
Sprinkle some grated cheese on top just before serving and put under the grill to melt as a topping.

Add ½ cup diced mushrooms just to be different..

OH YUM...this reminds me of 80's when creamy garlic and potato bake was in 'fashion'...it was stuff to clogg your arteries and after a meal you stunk to high heaven for a week... ;D
Your recipe is not million miles away from what we used to do..though we fried the potatoes first in butter to give little extra taste and colour and then they were layerd into pot with cream, garlic and more butter.. ::)
I still remember those days fondly but would not dare to eat it anymore.. ;D

Hi GL... but mine has the baby corn and leeks as well... :)  They just finish it of with a good flavour and a bit of crunch..

I did.  :D

In my usual way I didn't follow amounts and ended up with not enough cream to cover. Added some chicken stock to compensate, let cook uncovered for an extra 20 mins. Absolutely gorgeous. Me and Mrs both say though - needs bacon!

Sorry, another newbie wow speech here  ::) but I never knew that leeks tasted so d**n good  :D Mine are Monstrueux de Charentan. Last year i thought a leek was a leek, fit only for scotch broth or lentil soup. That's what I grew them for. After that dish, with the garlic and the cream and the leek...yum yum.

Cheers Gavin, you've opened my eyes to leeks.

Sounds tasty Gav,just the sort of din id have with Grilled Pork chops.....not have I have chops you understand....nasty fatty artery blocking fodder..........Oh Ok,just the odd 1 .....or 2 then..... :tongue3:

My thoughts exactly... but a few more than the odd 1 or 2...  :happy7:

The dish goes with most main course meat dishes...
