Leek seed question

I have five heads of seeds but they seem to be dropping off before they turn brown.  Should I cut them and finish drying on a windowsill.    They survived the bugs so I am hoping they may be somewhat resistant.

Just cut the head off 6" down the stalk and stand it in a jar of water
