German Sour Dough Friendship Cake

Got this from me Sis in Norfolk Recently and have just made it today,bluddy lovely with a cuppa !!!!
Soft,moist and moreish !!!!!!!!!!!!!


DAY 1 .......Starting point,get your portion from a friend.

DO NOT PUT IN FRIDGE AS THE CAKE WILL DIE !!!!!!!!!!

Place contents in 2 Litre mixing bowl,and cover with Tea Towel on kitchen side.

DAY 2.......STIR WELL
DAY 3 ......STIR WELL
DAY 4 .....Add following ingredients to cake mixture

115g plain flour
225g granulated sugar
235ml milk
STIR WELL AND RE COVER

DAY5......STIR WELL
DAY6......STIR WELL
DAY7......STIR WELL
DAY8......STIR WELL

Time to top up cake,add exactly the same ingredients as DAY4 and divide into 4 portions.


Give 3  portions to friends with a copy of instructions.

Continue with your 1/4 portion and now add last ingredients.

225g plain flour
225g caster sugar
2 eggs
2 tsps vanilla essence or (vanilla pod seeds)
2 tsps Ground Cinnamon
2 tsps Baking Powder
1/2tsp salt
160ml sunflower oil
2 cooking apples,peeled,cored and chopped.
100g walnuts/almonds (optional)
200g mixed dried fruits


mix ingredients together in bowl.



Place in a large greased roasting tin and sprinkle 50g brown sugar over top and add 50g of melted butter.


30 mins @ 170 degrees or a bit longer according to your oven.


let the friendship cake cool.


Enjoy a chunk with a cuppa or ice cream or cream.

Most important part is you have passed on 3 portions to friends or family so they can enjoy it too  !!!!!!!

I believe your friendship cake is traditionally called "Herman".

Your not alone Grannyjanny,being atype 2 Diabolic the majority of my cooking isnt destined for my belly but judes mates at work,they are my Guinea pigs and seem to enjoy the odd cooked snack from yours truly.

I had a 'Herman' last year, it was so delicious that I ate it till I was heartily sick of it. :-X

I have kept  an Amish one going  for many years now, it has crossed the Atlantic twice and has even been taken to Australia. We laughed at that as it went in 100ml bottles on the planes as hand cream.

Mine originally was given to me by a Mennonite friend who got it from am Amish relative in the US.

I love these ongoing friendhship cakes.

By the way I have refrigerated mine to slow it down but you have to let it come back to room temp and start counting days from then. I have never had it die.

My current left over Herman cake is safely tucked away in the freezer.  Now and then I get the urge, or a family 'do' is coming up, then I take some out and regenerate it.  My San Francisco sourdough (originally from a dry packet years ago) is also in the freezer.  Both have been taken out and reconstituted/shared, then frozen again, several times.  Yeast does come back to life well after freezeing. 

I agree with Jeannine, the 'countdown' begins when the pack is fully defrosted and back at room temperature and bubbling slightly when stirred.

WOW,Jeannine thats pure long term wisdom and something I didnt realise.
I will let Judes friends know at work as she has passed on 3 portions to them today,I also didnt realise you could freeze and bring it back....."Top Tips"".....still as to the overseas I can just see the customs officer asking...""whats this sir" and after telling him its my E45 Cream for my Psoriasis officer !!!!!,hes only convinced with me smearing it over my hands.......hhhhhmmm     thats so cooling officer,.......NOT   !!!!! ::) :-\

Herman the German friendship cake has recently been doing the rounds at work.

The cake is gorgeous, very moist & moreish . . . and apparently there is a white chocolate & strawberry version too !!

Anyone want to explain to me here  WHY 'borders' and border regulations should be ignored and why it is such a 'hoot' to have done so?

Still smarting here about having a small jar of mustard confiscated  :(  The sausages it was to go with, were fine ......

I have no problem taking my boots off and having my luggage searched in the interest of safety.  But I cannot possibly see the harm in a small jar of Herman cake starter or in half a jar of mustard (the remaining contents were far less than 100ml, but the jar was 125ml).  Had I not shown the mustard with the toiletries, they would have never noticed it.  Ho Hum!I understand about fruit fly entering Australia too, when there is a good reason, no problem.  When there isn't ........
