Clemintine Marmalade

a couple of new recipes for ya all. :)
Ingredients

450g Clementine's (Well scrubbed and dried)
2 large lemons, (Well scrubbed again.
1.2 litres of water (2 pints)
1.3 kg of granulated sugar (Warmed in the oven at the lowest of low temperature)

Directions
Cut the fruit in half and squeeze juice into a heavy bottomed saucepan. Cut and peel the skins into thin strips and put them also into pan add the water. Bring to the boil and simmer gently, uncovered, until the peel is very tender about 20 mins. Remove from heat and stir in warm sugar (if you have forgotten to warm the sugar don't worry it still works).
When the sugar is completely dissolved return to the heat and boil rapidly for about 20 minutes or until if you put a bit on a cold saucer and wait a few minutes it should start to set, if it doesn't boil for another 10 minutes and try again.
Once you have reached the setting point take off the heat and let it stand for 15 mins as this prevents the peel rising to the surface after you have potted it. Stir once and pour into sterilised jam jars, cover with cling wrap an screw on the lid and label.
