Need Recipes for Small Yellow Pumpkins

Having used these for floor covering under our sweetcorns we had about 30 hand sized yellow pumpkins
from 4 seeds that we had sown,chuffed to have got them to grow in the first place and their wild abandoned
growth certainly kept the weeds back.

Anyway,I have only steamed the flesh and had them as a plate filler really.

The Pumpkin Soup recipes ive seen all ask that you start with a traditional huge orange Pumpkin
and as far as I know the flesh is firmer than the yellow ones we have grown.

Has anybody else grown these and used them in soups....stews ...etc.

Any and all Recipe ideas would be welcome as we have about 15 left to use up.

Of course you can use them in soups or stews; mine go into anything I'm cooking. Pasta sauces after the peppers or onions are cooked, noodles [cut Julienne style and fried], chillis [diced], roasted [chunks] - I usually carve one up at a time and dice it and keep it in the fridge in a bowl, and just chuck it into any meal I'm making

I use them in curry's and casseroles to thicken the sauce when cooked to a pulp.
Pan fried with garlic and onions as a vegetable.
They will probably have more taste than the orange type for soups also.

They look more like a summer squash to me ???


Here is the recipe I posted last year on this web site...any blue cheese can be used and I have tried danish blue cheese and dolcelatte which I now prefer.  instead of the brie. It really is delicious!!

Courgette And Brie Soup Recipe

Ingredients
·   1 lb Courgettes sliced
·   6 oz Brie
·   2 pt Chicken Stock
·   1/4 pt Cream
·   1 Onion chopped
Method
1.   Add the onion and courgettes to a saucepan and saute in olive oil for a few minutes.
2.   Pour in the chicken stock and stir.
3.   Let it simmer for 30 minutes.
4.   Pour into a food processor, add the Brie cheese and liquidize.
5.   Stir in the cream before serving.

Try my fool proof recipe for overgrown courgettes, marrow or pumpkins. cut lengthways and remove the seeds. Then cut into large chunks and stream until just the outside is cooked. The steaming removes some of the water.
Transfer to an ovenproof dish and pour over made up packet of cheese sauce, carton of cheese sauce or your own recipe. I add a small double cream and a bit extra grated mature Cheddar. sprinkle with Parmesan and bake for no longer than 10 min in a fairly hot oven. You could add other ingredients. Just experiment. I made it for my daughter tonight and she was very impressed.

thanks folks I will be trying any and all to use em up as we dont like seeing a "glut" of anything going to waste.
