Green tomatoes

Hello,

Does anyone have any sensible ideas as to what to do with green tomatoes?

Chutney, pickled whole if small and as pie filling with cinnamon and sugar, not unlike apple pie, fried green tomatoaes, I like mine with the addition of parmesan cheese in the mix.

A few years ago, when we lost all our outdoor tomatoes to blight at the point there were loads of big green ones, I found there are plenty of  recipe ideas on the internet.  Just google green tomato recipes, and you will see! I particularly remember doing soups and some delicious traybake and chocolate cakes with them.

Unless they have blight it is possible to ripen them up for a considerable time.  To do it quickly put in a closed dish or a paper bag with a banana or an apple or an already ripe tomato.  

To take longer spread them in a well venitlated place as far apart as poss or on a north facing window sill.  Check regularly for any going mouldy.  It is often possible to keep them until Christmas.

They do not taste as good as those ripened on the plant.

fried green tomatoes are nice, especially with the beefsteaks.

It's best though when you slice them to remove the whitish bits from the centre as these are rock hard, don't cook through and don't taste of anything anyway

I agree with patience. Let them ripen in their own time in a box.

And use them progressively as recommended. Remember that they are riper inside than might appear.
