Everything's going to seed!

First all my caulis, the first year I've ever grown them- we only got to eat two little ones. :( Now my calabrese. Is there anything I can do with five big heads I've cut this evening? They all have a few yellow seed-heads forming. Can I cut off the good bits and freeze them?
And my sweet peas- will cutting the seedpods off encourage it to flower any more or is it too late?

I got most of my stuff in early.

The broccoli has been and gone but didny go to seed,  my overwintering onions had two bursts of seeding. My Chard has seeded, but otherwise im ok.

If the calabrese heads are still edible stage..yes you can still feeze them..actually you could trim the flower buds off if they are already yellow and still freeze the 'stem' bits ..they'll be fine in stews and soups ;) And the plants should still put up new but little broccoli heads after the main one is cut off...so don't go and dig the plants up quite yes..often I get little caulis too.
As for sweet peas..it is worth of try..I'm sure if the weather allow they will keep growing and producing more flowers..they may not be anymore as lush than those at first bloom but still lovely I'm sure.

my red onions is forming seed heads do leave them or pick them off did i not read that now their seeding they wont grow any more nice size onions on the white red not so big planted at the same time

I picked the calabrese that had just got a few larger flower buds on and cooked it. You cannot see it once the cheese sauce is on it
When I get old I don't want people thinking
                      "What a sweet little old lady"........
                             I want em saying
                    "Oh Crap! Whats she up to now ?"

Once they go to seed there done. You have to pick them and use them immediately, they wont store, because along with a seed pod they produce what known as  "thick necks',  the inner core of the onion becomes a single solid piece rather than a series of layers. The onion will not dry and store now, the neck will rot.

All you can do now is pick them, remove the solid thick core and dice them and freeze them raw.

I planted out some lettuce from lidl but that has now gone to seed but it is all sorts of interesting colours and leaf shapes.  All red pillars of colour particularly attractive.  So I am going to leave it to seed, and hopefully I will get attractive lettuce weeds come spring all over the place.

Lots of flowers of rocket.
