Resprouting Veg

Last year my onions didnt amount to much and when autumn came I didnt clear the bed, they have resprouted this year, will they grow on as normal and be ok to eat?

Ditto with parsnips, they have resprouted and are now very leafy, is it worth attempting to eat them?

my few parsnips are still OK. The tops are a bit soft and they're a bit woody, but still fine to eat. they're just starting to go to seed, so best be quick.
I suppose the onions will either just grow on or go to seed.........

yes you'll find that in the 2nd year they will fower and go to seed. You can eat the onions like spring onions though, the stems are good and they usually get a sort of oniony base inside them but the outside layers usually start to rot...
