Help needed with Horseradish plant.

This is the first time I have grown horseradish. I have just harvested my horse radish plant and it has long thin roots about the diameter of a pencil and quite a few of them. I was told I should have roots the size of carrots?!!!!! Anyway I want to save a couple of pieces of root to grow again next year. How do I store the pieces of root over winter?
Oh I forgot to mention that I grew the horseradish in a black dustbin and would like to do the same again next year!

There is no need for storing..just put your spare bits into where they are going to grow..and they will come again next spring..and again...and again..
Some nourishment would be good for to 'fatten' the new roots next year..Blood, fish and bone meal would do good..once you plant the bits..and again once growth start ;)
